The month of December is upon us and with holiday parties in full swing and game-day get togethers, you’re going to need this quick and easy recipe.
Dips are always crowd pleasers. You can serve most dips with a variety of ‘dippers’ ranging from veggie sticks to potato chips — it really depends on your favorite pairings. I prefer the classic pairing of potato chips when it comes to onion dip, pita crisps for the guacamole and don’t forget the extra large tortillas for the 7 layer taco dip.
Okay, here I am daydreaming about all the many dips and their perfect dipping matches when I should be telling you the recipe for this awesome artichoke spinach dip.
The recipe is so simple, you don’t even need a knife. Best when eaten hot out of the oven and with anything that will do the dipping, from veggies or crackers to tortilla chips or pretzels, all of these are suitable matches — perfect for that festive get-together at work or a last-minute invite on game day.
Artichoke Spinach Dip
Serves: 6-8
Ingredients
1 cup frozen spinach, thawed
1 8oz can artichoke hearts, juices drained
1 cup mayonnaise
1 cup grated Parmesan cheese
1 8-oz. package cream cheese, softened
Salt and pepper to taste
Remove any excess liquid from the spinach by squeezing, disposing of the juice. Place the spinach in a food processor. Pulse 3-4 times until chopped. Squeeze any excess juice from the artichoke hearts, place in food processor with the spinach. Pulse 3-4 times until chopped. Add the remaining ingredients and process until well combined. Taste for salt and pepper.
Spread into a pre-greased 2-quart baking dish. Bake at 400 degrees for 35-45 minutes or until the top is browned. Serve with potato chips, tortilla chips, vegetable sticks, pita chips, pretzels, etc.
